stevia chocolate syrup




I wanted to make something with the homemade stevia extract and after poking around a bit decided to try this chocolate syrup. Just FYI, I used one tablespoon of my stevia extract -- and next time around will use a touch less vanilla extract than the recipe calls for. This syrup is strong, almost like a concentrate, but once incorporated into something, it is so very fine.

Since I'm trying to stay off sugar, I tried it out in ways other than over ice cream or cake. A homemade Americano was pretty wonderful -- 2 shots espresso + hot water -- with a spoonful of this syrup and a dribble of cream. And so was the hot cocoa I had this morning, made with frothy milk and a big spoonful of syrup.

I'm thinking about cutting into the calendar cloth. I don't know if I can do it on this one...it's just so nice!

  1. oh yum! I'm three weeks into 'no sugar' and no six other things, too... I am ready to start reintroducing small quantities of sweet -- what kind of chocolate did you use?

  2. Hi Dee -- I just used Hershey's unsweetened cocoa powder because that's what I had on hand. Three weeks is great, congrats! When I recently read that sugar is related to Alzheimer's via a third type of diabetes, that sort of did it for me. But then again, everything in moderation....

  4. The chocolate syrup looks delicious.
    It is such a challenge to stay off of sweet for me and it is the very thing I need to do. ugh!

    Fun that you have a calendar from 1967! It would be hard to cut into, if it has some sort of sentimental value...otherwise, carpe diem! :)

  5. YUM! I should be trying harder to stay off sugar...maybe next week! Love the calendar. The monthly swap meet at the Rose Bowl always has so much 'vintage' stuff...that's what the calendar made me think of :)
